Puff Pastry Cheesecake and Berry Tarts

Hello everyone!  This recipe is one of my new favorites and guests have requested that I add it to the website.  So I have added the Puff Pastry Tart recipe to the Boreas Inn website in the Recipe Section, accessible from the opening page of the website and from our “Cuisine” page –or from this hotlink!  Boreas Inn Recipes For a unique dining experience and a breakfast you will always remember, come to Boreas Inn, a romantic beach getaway, located in the dunes of Long Beach, Washington.  Voted by KING5 TV viewers as their top three Best B&B in 2010’s Best of the Northwest Great Escapes, we continue to make our gourmet breakfasts a daily event worth waiting for! Boreas Inn was also voted by readers as the “Most Romantic Getaway” in the Best of the Discovery Coast this year in addition to “Best Omelette”.   For a luxury beach vacation, with fine beach front accommodations and fabulous dining both at Boreas Inn and our local dinner houses, come to the beautiful Long Beach Peninsula!

The Puff Pastry Tart recipe I use at Boreas is derived from the KCTS Cooks Breakfast cookbook compiled from the kitchens of viewers of Public Station KCTS in Seattle. We have contributed to this cookbook.  This is, by far, one of my favorite breakfast cookbooks and contributing towards viewer supported public television is something we love to do!  This recipe was originally contributed by Kim Walton of Seattle.  Thank you, Kim!!  And our guests thank you also!  There are three parts to this surprisingly easy recipe.  It can be adapted in many ways by cutting the puff pastry into four pieces and making a savory filling or even a larger version of this lovely tart.  I also have made these tarts in mini-muffin tins for just a bite for our “second” pastries at our three and four-course breakfasts at Boreas Inn.  I will add an image when I remember to take a picture next time I bake them! (Sorry!) Enjoy the recipe!

Puff Pastry Cheesecake Tarts

Cheese Filling

2              tablespoons butter at room temp

1              8 oz. package cream cheese at room temp

1              egg

1 ½        teaspoons vanilla

4             tablespoons brown sugar

3             teaspoons lemon juice

½-1       teaspoon lemon zest

1             teaspoon orange liqueur (optional)

Mix all ingredients with an electric mixer until smooth and set aside.

Blueberry Filling (or any other berry of your choice)

2          tablespoons water (less if using frozen berries)

1          tablespoon cornstarch

1-3       tablespoons white sugar (depending upon sweetness of berries)

1           tablespoon lemon juice

1           teaspoon lemon zest

1           cup berries

2           teaspoons orange liqueur (optional)

Pastry Shells

1          package frozen puff pastry, thawed

1          egg beaten to brush on pastry

Preheat oven to 400 and spray regular size muffin tins with cooking spray. Open up the puff pastry sheets and cut the pastry into three long rectangles along the folds.  Cut each rectangle into three squares so you have nine squares per sheet. Press each square completely into the muffin tins so that the edges show above the top of each tin opening.

Place about 1 heaping teaspoon of the cheese filling on the center of each puff pastry. The cheese mixture will puff up during the baking process.  Place a dollop of the fruit filling on top of the cheese filling. Brush the pastry with the beaten egg and bake approximately 20 minutes until pastry is golden brown.

Note: You can use a canned peach or apricot cut side down over the cheese filling instead of the berries.  If you’d like to be able to use only a few puff pastry tarts at a time, after composing the tarts (don’t bake!) wrap tightly in plastic, place muffin tins in the freezer and once frozen, gently pop each tart out of the tin, place in a zip lock freezer bag and put back in the freezer.  Place the frozen pastries into muffin tins in desired numbers, brush with egg wash and bake at 400 degrees for about 20 minutes until the pastry is golden brown.

News flash! The Chinook Observer just released their reader’s survey results for the 2010 “Best of the Discovery Coast” and Boreas Inn scored in four categories! We were named “Coziest Bed and Breakfast” and “Most Romantic Get-away” and placed second for “Best Coffee” and third for “Best Omelette”. Wow! Kudos to Cafe Mam from Eugene, our organic, shade-grown, free-trade coffee with our own Boreas Blend– French, Italian and Espresso. We couldn’t be more pleased! We still have a couple of rooms open for our New Years’ Day Celebration with Crab Cakes and Champagne! Come to the beach! (And of course, we will be watching our Ducks win the Rose Bowl!)

We’re open for Christmas and even cooking prime rib for our guests!  We still have rooms open on Christmas and the weather is sunny! None of our favorite restaurants are open for Christmas Day, so we’re inviting “orphans” and our guests to a prime rib potluck.   Christmas Eve dinner is royally celebrated at our best dinner houses so you will have a great evening out.  Then you can come home to the Inn, so pretty with decorations from our annual guest Holiday Decorating Party.  New Years’ Day Crab Cake and Champagne Brunch is included, of course, if you spend a couple of nights over New Years’ with us.    Here’s our January 1, 2010 Menu! We have hosted over a dozen holiday open houses for our locals each year.

We will be having a full house at Boreas Inn this weekend.  The inn will be bustling full of Santa’s helpers!  Each year, our loyal guests come to Boreas on the first weekend of December to work and eat (and get a free night!) and make the Inn beautiful for the holidays. We drag out the decorations and make the tree (this year a perfect Noble Fir) beautiful.  We call it a Hanukkah Bush/Christmas Tree to be inclusive!  We will not be holding our traditional Open House on the second weekend of the year, but will be open for informal tours and will hopefully be finding a time when the Long Beach Peninsula Visitor’s Bureau volunteers can come to Boreas for a Open House to thank them for  their work!  Cindy and Robert Davis, Walter and Tracey Voll, Fred Humphrey, Odell Hathaway, Su and Ray Benson are among long-time Boreas friends and loved ones. Jessica and Chris Miller will also be helping out.  Chris is the new school district psychologist and Jessica is a teacher who helped us out over the summertime.  They moved here in June from Colorado and we have adopted them.  We are looking forward to the decorating, the potluck and the company.  So come see Boreas  Inn decorated for the holidays. We have rooms open for Christmas and for our New Years three day holiday weekend.  Take advantage of our “Walk-in” Special rate for all of December and January, except for one night over New Years’ when you will pay our regular price for that night.  We have included our Annual Dungeness Crab Cake and Champagne Breakfast for New Years’ Day! Boreas Inn has been touted by guests in reviews on Trip Advisor and BedandBreakfast.com as having the best breakfasts! Here’s one such review. “Starting at 9:30 and lasting for at least 1  1/2 hours, they fed us the most wonderful, tasty meals that were really “brunch”. or other entree of the morning. This always held us over until we went to dinner at the best restaurants in the area that had been reserved for us in advance by Susie.”

Since you will indeed be feeling well-fed until dinner time, let us set up your dinners!  The Depot Restaurant’s clam chowder, with each bowl beautifully hand-crafted, has been receiving the “best clam chowder I’ve ever had”  reviews from our guests for years.  It’s no surprise! Chef Michael and his team steam the Willapa clams for each bowl and add the razor clams and freshly sauteed veggies just for your bowl of chowder!  We love the philosophy of hand-crafted local foods, made with attention to detail with the love of the art of fine cuisine as demonstated by our local Chefs, particularly at The Depot, Pelicano, the 42nd Street Cafe and The Shelburne Restaurant and Pub.

“Dining At The Source” is what it’s all about here on the Long Beach Peninsula. Fresh, local ingredients and the passion for cooking are evident not only at Boreas Inn.  The variety of “the best” grilled steaks, seafood and fresh specials makes The Depot, especially when we reserve the Chef’s Table for our guests, a top pick of our guests along with Pelicano Restaurant on the Port of Ilwaco. Pelicano receives top reviews for their variations on their fried fresh Willapa Bay oysters and the deliciously crisp, perfectly balanced Caesar salad, one of my favorite combinations. Order them as appetizers and you get a full meal deal for $16. Then you have room for Chocolate Pot au Creme for dessert. The most decadent dark chocolate preparation available on the peninsula.  The 42nd Street Cafe has Jean Marc, the waiter extraordinaire, exotic daily changing seafood stews, pot roast like your mom used to make (well maybe….) and THE BEST sturgeon preparation when in season!  I could go on and on about our local restaurants, the wait staff, chefs and dear friends who are the proprietors. You have to eat it to believe it! Experience our wild winter weather, beautiful holiday decor (going up with help from guests on December 6th) and our annual New Years’ Day Crabcake and Champagne Brunch, offered at no extra charge to our guests! We will set up everything to make your stay simply perfect! We have a couple of openings left for Thanksgiving and lots of rooms available for Christmas and afterwards. Relax by the fire places and dine on the best cuisine the Pacific Northwest has to offer!  Boreas Inn was chosen as the Top Five Best B&B’s by KING 5 TV “Northwest Best Getaways” in 2009!

Wild Mushroom Fest at Boreas–Special Guests

In the Pacific Northwest, sometimes you need only to drive a short distance and you’re in another world. Such is the case when we have guests from Astoria, Oregon, a quick 15 mile drive from the Long Beach Peninsula.  This year, we have neighbors from Astoria visiting Boreas for our 8th Annual Wild Mushroom Festival, Holly Owen and her husband Matthew Stanley.  Holly is employed by Quality Assurance International, based out of southern California.  QAI oversees organic farms and processors of organic foods to make certain they are in compliance.  She is a compliance reviewer and works from her home in Astoria.  (How convenient is that??)  Matthew is the General Manager for the Astoria Co-op and is an enthusiastic mushroom hunter.  Holly and Matthew arrived yesterday for their weekend stay with a big bucket of Matsutaki mushrooms and we feasted on them last night.  Currently, a bunch are being dehydrated in our oven so they can be used long after the season is over!  We welcome Holly and Matthew, newcomers to the Pacific Northwest!  Holly’s father, Tom Owen, bought them this special Wild Mushroom weekend at Boreas for her September birthday.  Thank you, Tom and Jane!

Summer is Coming!

Bill and I are about to take a couple of days off together. We haven’t done that since January–so we’re off to Bend for two days leaving Boreas Inn in the hands of our trust substitute innkeeper, KC Worrall and her husband Kirk. I have known Kirk since high school summer drama days. We were in Winnie the Pooh together; he was Eeyore and I was Owl. Pooh had vodka in his honey jar. We had some new pics of the inn taken by a professional traveling photographer. He knocked at the door and presented with a beautiful wide angle digital camera and although it is not the best time of year quite yet for the gardens, he got a few interior shots that are hard for me to get. So I will stick a couple of them up on this blog. The weather in Long Beach is turning beautiful; the garden is finally getting into shape thanks to a lot of help from Skyler, Allan and Stacey this week. It was fun working together and I will get pics of the garden up on the blog as it starts to bloom. The Saturday Market at the Port of Ilwaco is going strong and the tall ships are coming in June. For events and festivals, always go to www.funbeach.com for the most up to date information. Or call us! We have plenty of openings in June, so come see us! Remember that dining on the Long Beach Peninsula is unique and very exciting. The salmlon fishing season promises to be on of the best in the last decade and sturgeon are still biting (and delicious). Have a great weekend!

Thank you for picking Boreas Inn on KING 5 TV’s Northwest Best Escapes as one of the “Top 5″ Bed and Breakfasts!  We are thrilled to be among the winning group and know that without our guests’ wonderful reviews and votes, that we would not be named with such worthy inns.  This is a great reward and knowing that we are appreciated is truly the best thanks we could have, other than a fully occupied inn!  Come visit and help us celebrate being a Long Beach, Washington Best Escape!   Adding to the KING 5 “Northwest Best Escapes” awards, Long Beach was voted “BEST BEACH” and the Boardwalk in Long Beach was voted “Best Place to Kiss”. The North Head Lighthouse was voted #2 “Best Lighthouse” and the Cape Disappointment Lighthouse was voted #3 “Best Lighthouse”.    So in summary, Boreas is on the Best Beach and five blocks from the “Best Place to Kiss” and 10 minutes from two of the best lighthouses!  How cool is that?  Thank you to KING 5!

An Ode to Fort Columbia State Park Near Long Beach, WA

When driving on Hwy 101 N. after crossing the Astoria Megler Bridge or from Highway 4, you find yourself driving up the most spectacular piece of highway bordering the Columbia River heading northwest towards Long Beach, Washington. You will encounter Fort Columbia State Park, 2 miles west of the bridge, right after you drive through the tunnel. Lots of people miss the grand entrance to this park. This beautiful photo that I found on Flickr is of the restored Officer’s Quarters at Fort Columbia.

Fort Columbia State Park is almost 600 acres of historical parkland with 6,400 feet of freshwater shoreline right on the Columbia River. As State Parks puts it, “The park celebrates a military site that constituted the harbor defense of the Columbia River from 1896 to 1947. The fort was fully manned and operational through three wars. The area was also home for the Chinook Indians and their famed Chief Comcomly.” It was chosen as a key military defense site because of the unobstructed views of the Columbia River. The town of Astoria, Oregon glimmers across the expanse of water. There is an interpretive center, five mile of hiking trails and picnic tables… This is a great spot for a wedding or family reunion or a quiet time for exploring and imagining the time when the mighty Chinook Indians lived on the land.

The State of Washington currently plans to close around 25% of their state parks. They plan to “mothball” Fort Columbia because it is one of the lowest income producing parks in the system. Mothballing means that the gates will be chained and the park closed. This is a tragedy for the State of Washington, for our visitors and for the residents who love this park. The historic significance of Fort Columbia is important–and the vista’s from the park are simply beautiful. Perhaps there will be a reprieve. When you come stay at Boreas Inn, you should visit Fort Columbia and revel in it’s beauty and hike on it’s trails. You will never forget it!
